Roquefort is a famous French blue cheese made from raw sheep's milk, known for its sharp, tangy, and salty flavor with a creamy, crumbly texture and blue-green veins from Penicillium roqueforti mold. It must be aged in the natural Combalou caves in Roquefort-sur-Soulzon, France, and is protected by an Appellation d'Origine Contrôlée (AOC). It's often called the "king of cheeses" and pairs classically with sweet wines like Sauternes, but also works well in sauces, salads, and with meats.
